To make the granola dust take about 1/2 cup of homemade granola (recipe on my blog) put in a food processor until it has turned to flour like texture.
The pancake mix:
1 cup of milk (you can use any- I used almond milk)
1 cup wholemeal flour
1 tbsp rapeseed oil (or any other vegetable oil)
1 tbsp sugar (optional if you like them sweet)
Mix all ingredients together in a bowl. Use a non stick frying pan on a high heat to start with and then turn to medium heat. Take about 2-3 tablespoons of mixture at a time and put in the pan and let it cook on both sides until the colour is light brown. Serve with whatever you like! I served this to my kids with chia seed jams (recipe on the blog) and they loved it. I didn't tell them what was in the pancakes…or the jams!
Chia seed jams
You can make this with any fruit that you like and the method is more or less the same. I used blueberry&vanilla, apricot&green tea and strawberry&rosewater.
Blueberry and vanilla:
Use about two cups of fresh or frozen blueberries. Put in a sauce pan on a medium heat with about 1 tablespoon of sugar and 1teaspoon of vanilla extract or vanilla paste. Let the blueberries cook until they have released their juice. Blitz with a hand blender until smooth. Mix in about 2-3 tablespoons of chia seeds (depending on how thick you like it) and put in a container to set. Place in the fridge for a few hours.
Strawberry and Rose water
Use 3 cups of strawberries (frozen or fresh) stalk off and cut into quarters. Place strawberries in a saucepan with 1 tablespoon of sugar. Cook until juice from the fruit has been released. Add 1 teaspoon of rosewater and blitz with a hand blender until smooth. Mix in 2-3 tablespoons of chia seeds and pour into a container to set in the fridge for a few hours.
Apricots and green tea:
This is best made with tinned apricots but make sure you get the ones in juice and not syrup. Use one tin or if using fresh apricots use about 6. if using fresh ones the skin will need peeling off. This is best to do after they have been soaked for a few minutes in a bowl with boiling water.
Cook the apricots in a saucepan on a medium heat. Add 1 tablespoon of sugar. Let them cook until they have released their juice or have become soft (tinned ones will be soft already but the fresh ones will need more cooking time).
Soak one bag of green tea in a small amount of boiling water (for a couple of minutes), take the bag out and pour into the apricot mixture. When cooked blitz with a hand blender until smooth, add 3-4 tablespoons of chia seeds and pour into a container to set. Place in the fridge for a few hours.
