This is packed with wonderful, seasonal things and gives you such warmth. Especially good for those who are into pumpkin spice anything! Delicious, filling, healthy and slowly releases energy to keep you going.
350 g rolled oats
20 g White or black Chia Seeds
3 tbsp sesame seeds
75 g pumpkin or sunflower seeds (or a mixture of both)
150 chopped nuts (you can choose any- I used a mixture of pecans, brazil nuts, walnuts and almonds)
Pumpkin Spice Mix for granola:
1/2 can of pureed tinned pumpkin (I used an American Libby’s) mixed with 1 teaspoon of the following spices: clove, cinnamon, nutmeg and ginger.
2 tablespoons of brown sugar.
5 tbsp of rapeseed oil
1tsp of vanilla extract or vanilla paste ( I prefer the paste as it has a more genuine flavour of vanilla)
1 egg white
Preheat the oven to 150 degrees celsius.
Start by mixing the all the dry ingredients in a bowl. In a separate bowl, make the pumpkin spice mix by mixing all the ingredients above. Combine both bowls together until all the ingredients are well mixed. Tip the granola onto two separate baking trays (or use the same tray twice) and spread the granola evenly so it forms a thin layer on the tray. Bake for about 30 minutes. Make sure you shake the trays couple of times whilst in the oven so the granola does not form a mass. When removing out of the oven, let it cool for ten minutes and then mix the granola again whilst still in the tray to make sure there are no large masses. When the granola has completely cooled down place in an airtight container to store. This can then keep for a month.
