The savoury granola is what really make this soup more than just...well- a soup! The recipe given below will make much more granola than you will need for this soup but you can store it for later use in an airtight container for about a month. It works well as a salad topping or you can mix some kale or cabbage crips into it
and have it as asmall snack.
For the soup:
1 large white onion
1 leek (whte part only)
about 1/2 tsp herb salt
about 1/2 tsp celery salt
250 ml good quality vegetable stock
200 ml whole milk (you can also use a milk alternative)
For the savoury granola:
1 cup of oats
a handful of chopped nuts (your choice)
a handful of seeds
1 egg white
Begin by making the granola. Preheat the oven to 200 C. Mix the oats, nuts, seeds and seasoning together with the olive oil and egg white. Place on an oven proof dish and tap down so it becomes a thin layer. Put in the oven. After 10 minutes, take the tray out and mix the granola so it cooks evenly and does not form lumps. Put it back in the oven for another ten minutes. Check again and if it has not gone slightly darker in colour cook for another ten minutes but mix it well again before doing so. When done, take it out of the oven and let it cool.
Now make soup. In a heavy saucepan heat olive oil. Put enough in so it forms a thin layer at the bottom of the pan. Chop the onion and the leek and add to the pan. Have the heat high enough for the onion to sweat but try not brown them at all. When they get the slightest browning colour, switch to lowest heat possible. Cook for about 30 mintes until completely soft. Peel the celeriac and cut to small chunks and add to the pan. Continue cooking on a very low heat for another 10 minutes or so. Prepare the stock and add the celery salt and herb salt to the mixture. Pour in the pan. Put the lid on top and cook until the celeriac is soft. This will take about 10-15 minutes. When cooked, take off the heat. Use a handblender to liquidise the soup. Add the milk in slowly whilst you are liquidising the mixture. Pour into bowl and add a small of handful of the granola.
