1 vanilla pod or 1 teaspoon of vanilla paste or vanilla extract
50g of butter or dairy free margarine (melted) 50g rapeseed oil 200 g brown sugar
3 ripe bananas 3 tbsp milk (any milk will do)
2 eggs 1 tsp baking powder 1/2 tsp bicarbonate of soda
90 g of rice flour 90 g buckwheat flour 90 g almond flour or you can use a total of 270g of any flour of your choice, I like to mix them! 2 tsp cinnamon 2 cardamon pods (seeds only)
1/2 cup of oats
Start by turning the oven on at 175 degrees celsius.
Mash the bananas together with the milk until they form a runny paste. In a large bowl mix together the sugar, oil, melted butter and eggs until combined. Add the mashed bananas and mix until combined. Last add all the dry ingredients (the flours, bicarbonate of soda, baking powder and spices) slowly and carry on mixing until you have a smooth mixture.
Take a loaf tin and either rub a thin layer of butter or margarine or cooking spray all around the tin including the edges. Pour the oats in and spread evenly until they cover the whole tin with a very thin layer.
Now pour in the bread mixture, If you wish you can slice a banana an place on the top of the bread- it will caramelise nicely in the oven but this is simply optional. P
lace in the middle of the oven for about 45 minutes. Let the bread cool before taking it out of the tin.
